Cauliflower Crust Arugula Pizza
I'm super obsessed with making these cauliflower crusted pizzas. I told myself I'd be making them at least once a week, trying out different options. I've been eating low carb high fat for almost 3 months now, food is getting better and better. I'm finding new fun recipes that have been turning out really good. This cauliflower crust is one of them and one of my favourites.
This is my second cauliflower crusted pizza, this Breakfast Pizza being my first. This time I opted for something a bit more vegetarian-friendly, which meant no bacon(sad face). I wasn't quite sure how I would top this off until it was actually time to top it off. I decided on arugula the moment I opened the fridge and wanted something that I would actually have as a salad. I love arugula and I usually have it as a salad with onion, almonds, and some kind of cheese, which was perfect for the pizza. As I was topping it off, I realised it was missing something which made me think of mushrooms, I know we all love mushrooms on a pizza. I quickly sauteed the mushrooms for about 2 minutes before adding to the pizza, since it wasn't going to be in the oven long. Unlike my last breakfast, I started the toppings with mozzarella cheese.
2 1/2 cups of cauliflower( processed)
1/4 cup Mozzarella Cheese
1/2 tsp of oregano
1/2 tsp of garlic powder
1/2 tsp of basil
A pinch of salt
Pre-Heat oven to 425 degrees. If cauliflower isn't processed yet, cut off florets and place in a food processor and blend until you have 2 1/2 cups. You will not need the whole cauliflower head. When finished, place cauliflower in a microwaveable bowl and microwave for 3 minutes cover bowl with saran wrap. When done, remove bowl from microwave and empty out the cauliflower onto a piece of parchment paper of cloth. Let it cool before straining, it will be hot. You'll then begin to squeeze the heck out of it and get as much water out as possible. You'll then dump the cauliflower out into a bowl and begin adding spices, cheese and the egg. Stir all the ingredients using a fork until mixed. Begin moulding the dough on parchment paper, and make whatever shape you'd like. Place in oven and bake for about 10 minutes or until brown. You may then begin topping it off, have some fun and try anything.
