Cauliflower Rice And Salmon Bowl


So many nights go by without knowing what to make for dinner. Unlike others, I really don't like cooking for long. I guess you can say I'm a bit lazy, but truth is, I just don't think it should take you that long to prepare something, a few exceptions of course. Over these past 2 years, I decided to take on a healthier lifestyle with my cooking. I introduced more vegetables, made kale my best friend and eventually ate less carbs with no added sugar. Till this day I still have the same eating habits while at home. Eating healthy can be tough at times but keeping it fresh and funky has been key. I recently started making bowls, whether their veggie, with steak, chicken or fish. They've been my favorite so far and take me less than 25 minutes. The fun part about bowls is how versatile they can be, you can literally add anything to them. I hope you get a chance to try this recipe, I promise it won't be hard at all, and you don't need that much time #dinnergoals. 

Serves 1


4 oz Salmon (wild caught)

Half an Avocado

1 cup of cauliflower rice

2 cups of kale (uncooked)

A handful of red cabbage

A few slices of radishes

2 Tbsp of olive oil

A pinch of garlic salt

Mixed greens

1 tsp of Chia seeds

Slice of lemon

  • Heat 1 tbsp of oil in a medium pan on medium heat. Add the cauliflower rice, saute for about 2-3 minutes. Meanwhile, season the salmon with the garlic salt. Take the cauliflower rice out, adding the 2 cups of kale, sauteing for 3 minutes. After removing the kale, add the salmon and 1 tbsp of olive oil, and saute until cooked (around 15 minutes) on medium heat. In a bowl, start by adding the cauliflower, kale, chopped cabbage, greens, radish, and avocado. Once salmon is cooked, place in the bowl, garnish with chia seeds and lemon.
