Loaded Sweet Potato Fries


I'm usually not a big fan of loaded fries, mainly because I don't like cheese. Also, another reason why I don't eat much pizza or anything with a lot of cheese. I saw an Instagram picture of fries loaded with everything you can think of. As much as I wanted those fries, I wanted to make my own healthier version. Which panned out to be a lot of fun and super delicious too.

I find sweet potatoes to be so yummy, I eat them four-five times a week. Instead of regular potatoes, I used sweet potatoes since they're healthier. I then added loads of toppings that I knew I would like, without forgetting the avocado because that would be a crime.

Serves 1


2 medium sweet potatoes

4 oz ground beef

2 cups of uncooked kale

half an avocado

a few slices of onions, radishes, green onion

2 tbsp of goat cheese

2 tbsp of sour cream

a pinch of cinnamon

2 tbsp of olive oil

salt/garlic salt

Heat oven to 375 degrees. Peel and cut sweet potatoes, place them on a baking sheet, add cinnamon spice a tbsp of olive oil and bake for 30 minutes. While the potatoes are baking, place the ground beef in a skillet over medium temperature. Add salt and a tbsp of olive oil and saute for 10 minutes. When done, remove the beef and saute the kale for 3 minutes. Once the potatoes are done, place them on a dish, first topping them off with the sauteed kale, then the beef. Slice some onions, radishes, and green onion sprinkling it on top of the fries. Then slice the avocado into cubes and add to mixture. Add 2 tbsp goat cheese and finish it off with 2 tbsp of sour cream, feel free to add as much as you want.
