Pan Seared Garlic Chicken Skewers With Almond Dipping Sauce

I've been meaning to make chicken skewers for so long, but never getting a chance to do so. I love chicken, it's one of my favorite foods and I like it prepared any style. More specifically, I prefer it fried or grilled. Due to Keto, I can't have regular fried chicken, and since I don't own a grill, I can't have it grilled either. I literally haven't had chicken skewers in so long, so you can imagine how excited I was to make these. Not only was this dish very easy and required very minimal equipment, but the ingredients were something you would normally have already in your house. I have to admit, I'm not a huge fan of chicken breasts, I usually buy chicken thighs. I think chicken breasts lack flavor due to the skin being off. But for this recipe, chicken breasts were more than welcome.

What I love most about this recipe is how easy it is, and for most, you already have all the ingredients in your kitchen already. I wanted to give these skewers that grilled/seared look without actually grilling it outside, and it turned out great just by searing it on the stove. As for the sauce, I originally wanted to make a peanut sauce dipping but since I only had almond butter in my fridge, I decide to make a almond butter dipping sauce instead. I made sure this recipe would be easy, as far as only using what I had in the fridge. There's nothing worse than having to always get items suitable for only one recipe without the chance of using it again. All you need for this recipe is 20 minutes. Even busy professionals, moms, or anyone else can dedicate 20 minutes to a delicious easy meal. I normally but almond butter because I feel it's best for apples, but since I'm keto and can't have apples, I wanted to use it up before it goes bad. If you have regular peanut butter, feel free to use that instead. 

Serves 3

Ingredients

6 thin chicken breasts

2 tbsp olive oil

2 cloves of garlic

pinch of salt and seasoned salt

For the sauce from Iowa Girl Eats

1/2 of almond butter

1 tbsp of soy sauce

1/2 tbsp of chili garlic sauce

1/2 tbsp of grated ginger

2-5 tbsp of hot water

1/2 lime juice

chili flakes

Cut chicken breasts in to small pieces, placing in a bowl. Add all spice and mix until all meat is seasoned. Take each piece and poke into the skewer until full. In the meantime, add olive oil into a pan on medium heat and start adding skewers. Sear skewers for at least 10 minutes, checking each side for browning. While the chicken is cooking, take small bowl and add almond butter( peanut butter), mix with soy sauce, water, lime juice, garlic and ginger until fully mixed. At this point you can add some hot sauce to the sauce or leave as is. Once the sauce it done, chicken should be done too. Enjoy!
