Quick And Easy Low-Carb Coconut Macaroons


I finally got a chance to make one of my favorite sweets, coconut macaroons. Before keto, I used to buy these almost every week at whole foods, and it's one of the things I miss the most. If you're not sure what keto is, think of it as a very low carb(>20 grams) per day, moderate protein and high fat. As much as I like this way of eating, I really do miss my cakes, biscuits, cookies etc.

While browsing Pinterest, looking for keto friendly desserts, I came across a few recipes I wanted to try. I did, however, have to do a little tweaking to my liking. Prior to trying this recipe, I've never baked with almond flour or baking in general. If there's something I hate doing in the kitchen, It's baking. I'm so terrible at it, I can't seem to follow instructions very well. But I will say, making this was so easy, cavemen could do it.  I'm a big fan of anything easy, I mean, who wants to be stuck in a kitchen for hours. Since I couln't use real sugar, I made these using sweet'n low sweetener, you're more than welcome to use any other sweeteners you like. To keep this recipe healthy, I wouldn't recommend using sugar. 



1/2 cup almond flour
1/2 cup unsweetened coconut flakes
1 tbsp coconut oil
2 tsp zero calorie sweetener
2 egg whites
1 tsp of vanilla extract
For chocolate sauce
2 90% dark chocolate squares
1 tbsp heavy whipping cream

Pre-heat oven to 400 degrees. In a bowl, mix almond flour, coconut flakes, and zero calorie sweetener until blended. Melt the coconut oil in a different bowl, adding the vanilla extract to it. Add the melted coconut oil to flour mix, and mix very well. In a different bowl, whisk 2 egg whites for at least 10 seconds until foamy. Add egg whites into mixture, and mix it all up. Use your hands to mold the mixture onto a cookie sheet, makes ten macaroons. Bake for 8-10 minutes or until macaroons starts to brown on top. In the meantime, melt dark chocolate in the microwave or stove, when done, add heavy whipping cream to the chocolate.
